When I switched to a plant-based diet, I expected to give up many familiar foods. What I didn’t expect was to discover an entirely new world of ingredients that had always been around me — but I had never truly noticed them.
Plant-based eating changed the way I look at food. Ingredients that once seemed simple or insignificant became powerful sources of nutrition, creativity, and flavor.



Here are some of the most surprising discoveries I made.
1. Seeds Are Not “Just Seeds” — They Are Nutritional Powerhouses
Before going plant-based, the word “seeds” sounded like something small, decorative, or simply something you sprinkle on top of a dish.
Today, I see seeds completely differently.
For example, adding 100 grams of ground sunflower seeds or pumpkin seeds to a breakfast can create a surprisingly protein-rich meal — perfect even for a vegan bodybuilder.
Seeds are not only about protein. They bring healthy fats, minerals, and unique flavors.
Sesame seeds were another big discovery for me. I always loved tahini, but I never realized that this creamy “plant-based mayonnaise” is simply made from sesame seeds. Behind its amazing taste is a nutrient-dense ingredient with a great protein profile.
A tiny seed can become the foundation of a serious meal.
2. The Incredible Variety of Plant-Based Egg Replacements
Eggs seem simple — until you try to replace them.
One of the biggest discoveries was realizing that there is not just one plant-based “egg.” There are many different options, and each one has its own personality.

  • Chickpea flour works amazingly well for savory dishes.

Now I understand that nuts can be a complete and powerful part of a plant-based diet.
Almond flour can become the base for high-protein vegan waffles. Hazelnuts can turn into a delicious pesto. Walnuts can become the foundation for plant-based “meat” patties. Peanut butter is the ultimate kitchen lifesaver — simple, nutritious, and incredibly versatile.
And then there is cashew.
Cashews might be one of the most magical ingredients in vegan cooking. With them, you can create creamy cheese alternatives, sauces, and even incredible dairy-free cheesecakes.
Nuts are not just a snack anymore. They are a whole world of culinary possibilities.
4. The Huge World of Alternative Milks
Another amazing discovery was how many different types of plant-based milk exist.
For many people, “milk” means only one thing. But after switching to plant-based nutrition, I discovered an entire universe:
Almond milk, oat milk, soy milk, rice milk, coconut milk, and many others — each with its own taste and purpose.
My personal favorite is coconut milk.
It is rich, creamy, and full of flavor. Its natural fat content makes it perfect for cooking, especially when you want a dish with a deeper, more luxurious texture.

The biggest surprise after going plant-based was not what I lost — it was what I discovered.
Instead of having fewer options, my food world became much bigger.
